1/2 cup mozzarella cheese shredded
3 tablespoons Parmesan cheese grated
1/4 cup Parmesan cheese grated
1/2 teaspoon Italian seasoning spice blend

1 teaspoon olive oil
1 egg well beaten

1 cup cremini mushrooms chopped
1 cup red pepper diced
1/2 cup onion diced
1/4 teaspoon garlic minced
1/4 teaspoon Italian seasoning spice blend
1/4 teaspoon kosher salt
3/4 cup goat cheese crumbled
2 tablespoons kalmata olives chopped

Preheat oven to 400 degrees and line a baking pan with parchment. Coat with cooking spray and reserve.

Squeeze as much liquid out of zucchini as possible and combine with remaining crust ingredients in a large bowl.

Spoon into two 8” circles on prepared baking sheet and smooth with a spoon. Bake for 20 minutes or until medium brown on the bottom and flip over. Bake for another 10-15 minutes or until evenly browned.

While crust bakes, coat a large nonstick skillet with cooking spray and heat over medium-high heat. Cook mushrooms, peppers, and onion for 5-8 minutes, stirring often, until softened.
