Preheat oven to 400 degrees and line a baking pan with parchment. Coat with cooking spray and reserve.

Spoon into two 8” circles on prepared baking sheet and smooth with a spoon. Bake for 20 minutes or until medium brown on the bottom and flip over. Bake for another 10-15 minutes or until evenly browned.

While crust bakes, coat a large nonstick skillet with cooking spray and heat over medium-high heat. Cook mushrooms, peppers, and onion for 5-8 minutes, stirring often, until softened.
