Tuna and Artichoke Tramezzini
A classic Italian cafe specialty, these adorable crustless sandwiches make for an elegant easy lunch. A great way to elevate basic canned tuna too!

1 TB light mayonnaise | |
1 tsp dijon mustard | |
1/2 tsp lemon zest | |
2 tsp chopped capers | |
Pinch kosher salt and pepper | |
4 oz can tuna in water, drain well | |
4 oz canned whole artichokes in water, ~ 1/2 cup chopped | |
4 slices light white bread, crusts removed |
Directions
1.
Mix together mayonnaise mustard, lemon zest, capers, salt, pepper, tuna, and artichokes in a small bowl.
Mark as complete

Divide evenly into 2 sandwiches. Cut each sandwich diagonally into triangles and enjoy.
