Stuffed Zucchini Pepperoni Pizza Boats

1 zucchini, halved lengthwise | |
Cooking spray or olive oil | |
Garlic powder to taste | |
12 slices turkey pepperoni, diced | |
3 TB minced onion or shallot | |
1/4 lb ground turkey | |
1/2 cup marinara or pizza sauce | |
1/4 cup shredded mozzarella cheese | |
1 TB grated parmesan cheese |
Directions

Preheat your oven or toaster to 450 degrees and line a small pan with foil.

Scoop seeds out of zucchini center and discard or save for another use.
Place zucchini "boat" skin side down on pan. Spray with cooking spray (or brush with olive oil), and sprinkle with garlic powder and some salt.

Roast zucchini for 8-10 minutes or until fork tender.

While zucchini is cooking, place additional cooking spray or olive oil in a medium saute pan over medium heat.
Add onion or shallot and ground turkey and cook, stirring occasionally until turkey is no longer pink. Season with garlic powder or garlic salt and stir in marinara or pizza sauce.
Combine chopped turkey pepperoni with cooked turkey mixture, reserving some pepperoni for topping.

Fill roasted zucchini with turkey mixture. Sprinkle evenly with shredded mozzarella, Parmesan cheese, and reserved turkey pepperoni.
