Spice Rubbed Shrimp Tacos with Chipotle Slaw

1 package Shrimp | |
1/2 tsp cumin | |
1/2 tsp chili powder | |
1/2 tsp garlic powder | |
Pinch each salt and pepper | |
1 tsp olive oil | |
6 corn tortillas, lightly warmed | |
Optional Toppings: cilantro. scallion, avocado, radishes, and lime wedges for serving |
Chipotle Slaw
2 cups shredded cabbage or Cole slaw mix | |
3 TB light mayonnaise | |
1 tsp minced chipotle in adobo, or to taste | |
1 tsp lime juice | |
Salt and pepper to taste |
Directions

Use kitchen shears to cut up the backs of the shrimp to easily remove the shells and legs. Toss shrimp with cumin, chili powder, garlic powder, salt and pepper. Heat olive oil in a large sauté or grill pan (or coat an outdoor grill with cooking spray). Cook shrimp for 2-3 minutes per side or until firm and bright pink.

Toss together Chipotle Slaw ingredients. Serve tacos buffet style or divide slaw and shrimp across all tortillas. Enjoy with optional toppings!

Notes
TIP: You can also make this recipe into Shrimp Taco bowls - just serve shrimp and slaw on top of shredded romaine lettuce, diced tomato, black beans, and optional corn or avocado.
