Rich, Fudgy, Healthier Brownies…with a Secret!
Can you believe these amazing rich, fudgy brownies are also healthier and nearly flourless? The secret? Pureed black beans in the batter (yes … black beans! and nope…they’ll never notice they’re there!). They create a dense, thick, moist so-delicious brownie with additional protein & fiber. A yummy, optional chocolate glaze sends these over the top.

1 15 oz can black beans rinsed and drained | |
1/2 cup sugar | |
1/4 cup cocoa powder | |
1/4 cup melted butter or vegan butter | |
3 eggs or egg substitute | |
1/2 teaspoon table salt | |
1/2 teaspoon baking powder | |
1/2 teaspoon vanilla | |
3 tablespoons flour or GF baking mix | |
1 cup chocolate chips divided | |
1 teaspoon vegetable oil |

Directions

Preheat the oven to 350 degrees. Spray an 8x8 baking pan with cooking spray.

Place black beans, sugar, cocoa powder, butter, eggs, salt, baking powder and vanilla in the bowl of a food processor. Process on high for several minutes until completely smooth, scraping down the sides of the bowl several times. Add flour and 1/2 cup chocolate chips and pulse to just combine.

Spoon mixture into prepared baking pan and bake for 25-30 minutes or until center is set. Cool completely before topping.

Melt remaining chocolate chips and vegetable oil in a small bowl in the microwave for 30-60 seconds, stirring frequently. Spread over the top of the brownies and sprinkle with optional decorations.

Notes
For a fun holiday twist on these you can make minty brownies! Just add in 1/4 tsp peppermint extract and swap in mint-chocolate chips.
It's also fun to decorate the top of these with melted white chocolate and crushed candy canes for Peppermint Bark Brownies!
