Oven-Fried Tempura Veggies w Wasabi Soy

1 teaspoon kosher salt | |

Wasabi Soy Sauce
2 tablespoons low sodium soy sauce | |
2 teaspoons seasoned rice vinegar | |
3/4 teaspoon wasabi paste | |
1 teaspoon ginger minced | |
1/2 teaspoon garlic minced | |
chopped scallions for garnish |

Directions

Preheat oven to 450 degrees and line a baking sheet with parchment paper. Place vegetables and flour in a large zippered baggie and shake well.

Combine panko and salt in a shallow dish. Dip each veggie in egg, then coat in panko and place on prepared baking sheet, leaving room between (if necessary, use a 2nd baking sheet).
