Foil Packet Lemon-Garlic Brook Trout with Broccolini
An easy weeknight dinner that comes together in 15 minutes with little to no cleanup? Yes please! Our delicate, mildly flavored Brook Trout cooks to delicious perfection with a light but flavorful sauce right in a foil packet.
|1 package Brook Trout|
|2 TB butter, melted|
|4 cloves garlic, minced|
|1 TB chopped fresh parsley|
|1 TB lemon zest|
|8 oz broccolini or broccoli florets|
|Optional lemon wedges and chopped chives for garnish|
Preheat oven to 400 degrees. Place one large piece of foil on a baking pan. Place a 2nd piece of foil crosswise. Place Oceanbox Brook Trout and broccolini in the center. Season with salt and pepper. Combine butter, garlic, parsley, and lemon zest in a small bowl and drizzle over Brook Trout and broccolini. Tightly fold all 4 sides of foil in to make a packet. Bake for 15 minutes or until Brook Trout is opaque and flakes easily with a fork. Serve topped with chives and a squeeze of lemon.

Tip: You can also add hot pepper flakes or other chopped herbs to the garlic-butter mixture or swap in other quick cooking veggies like sliced peppers, mushrooms, or diced zucchini to switch this recipe up! These foil packets are perfect to prep ahead and can even be cooked on the grill in the summertime.
