3 Grilled Chicken Meals In 10 Minutes (or Less)

Cooking for one person is a task that requires us to do some outside-the-box thinking, the motivation can be low when we are only cooking for ourselves. It is the reason that we struggle with our healthy eating goals. The key to cooking for one or two people is repurposing ingredients and knowing how to use them in a variety of ways. With that in place, cooking becomes much simpler, and you don’t even have to start from scratch. It is a huge psychological boost to walk into the kitchen and know that you will walk out of there with a delicious meal in 10 minutes or less.

Speedy Veggie & Chicken Stirfry
  • 1 tsp ginger
  • 1 tsp garlic
  • 2 cups sliced veggies
  • 1 grilled chicken breast
  • 3 TB stir fry sauce
  • 1 cup cauliflower rice
  • 2 sliced scallions

Taco Tuesday!
  • 1 grilled chicken breast
  • 1/4 cup salsa
  • 1 tsp cumin
  • 2 corn tortillas
  • lime
  • 1/4 cup fat free Greek yogurt
  • 1/2 cup cole slaw mix or shredded cabbage
  • 2 sliced scallions
  • optional cilantro and hot sauce

Comfort Food Italian Chicken & White Bean Soup
  • 2 cups chicken broth
  • 1 grilled chicken breast
  • 1/2 can diced tomatoes
  • 1/2 can cannellini beans
  • 1 cup frozen veggies
  • 1/2 tsp Italian seasoning
  • 1/2 tsp granulated garlic
  • 2 TB grated Parmesan
